Whole Pig Breakdown Class (2 days)
Get an in depth lesson in whole animal butchery. Class will cover farming practices, meat quality, knife skills, and how to successfully break down the carcass into primals and subprimals, then clean and portion the ready to prepare cuts. You will see the different choices that must be made when we butcher a large animal into manageable cuts. We will also discuss cooking methods and preparations for each cut. Meaty snacks will be provided to taste various cuts.
Class will only consist of 4 people maximum
Each student will receive 4-5 lbs of meat to take home.
